There’s garlic, and then there’s Morado. This variety, originally from Spain, immediately stands out for its extraordinary appearance: the bulbs are a deep wine-red colour, with underlying cloves in shades of purple and red that become visible when peeled. Morado isn’t just any old vegetable — it’s a variety with personality.
The flavour confirms this. The cloves are thicker than those of many other varieties, making them easier to peel, and the flavour is fuller and more pungent than you’re used to from ordinary supermarket garlic. Fresh from organic soil — you can really taste the difference.
Decorative and functional
Morado garlic is also a feast for the eyes in the garden. As they grow, the stems form an elegant curl — a characteristic feature of hardneck garlic varieties. You can cut off these curls, also known as ‘scapes’, and use them in the kitchen. They have a mild garlic flavour and are delicious in a stir-fry or on the barbecue.
Garlic is best planted in the autumn, from October to December. Break the bulb into individual cloves and plant them about 5 cm deep and 15 cm apart, with the tip facing upwards. Choose a sunny spot with well-drained soil. The garlic grows steadily throughout the winter and is ready to harvest in early summer, around June–July, when the foliage begins to turn yellow.
